All of our beef is vacuum-sealed and flash-frozen shortly after processing. Flash freezing means the temperature drops fast — much faster than your home freezer. That speed matters because it creates smaller ice crystals inside the meat, which means the cell structure stays intact. When you thaw it, the texture, color, and juiciness are preserved. It's as close to fresh-cut as you can get without being there the day it's processed.
